The Hillgrove Hotel & Spa is seeking an experienced Bars Manager to lead our vibrant bar operations and oversee multiple bar outlets across the hotel. About the Role

As Bars Manager, you will take ownership of the full bar operation, ensuring each outlet delivers consistent quality, guest satisfaction, and a welcoming atmosphere. You will manage day-to-day operations across several bars, lead and develop your team, drive revenue, and uphold brand standards aligned with The iNUA Collection’s commitment to excellence.

What You Will Be Responsible For

• Overseeing the daily operations of all bar outlets, ensuring service excellence at every touchpoint

• Leading, coaching, and motivating the bar team to deliver exceptional guest experiences

• Implementing and maintaining high standards of service, product quality, and presentation

• Managing ordering, stock control, supplier relationships, and cost efficiencies

• Creating innovative drinks menus, promotions, and seasonal offerings

• Ensuring compliance with licensing laws, health & safety, and HACCP requirements

• Driving revenue performance through upselling, team training, and operational efficiency

• Supporting wider hotel events, functions, and F&B operations as part of the management team

• Collaborating with senior leaders and contributing to strategic goals across the hotel

• Previous experience managing multiple bar outlets in a busy hotel or hospitality environment

• Strong leadership skills with the ability to develop, engage, and inspire a diverse team

• A guest-focused mindset with a passion for delivering memorable hospitality

• Excellent organisational, communication, and problem-solving abilities

• A creative approach to mixology, beverage trends, and menu development

• Strong commercial awareness and experience managing budgets and costs

• Ability to thrive in a fast-paced environment and maintain a calm, professional approach
