Sous Chef A Historic Luxury Castle — Irish Midlands
A luxury castle property is opening in the heart of the Irish Midlands — a destination of rare character, committed to a standard of guest experience that is genuinely world-class. As this landmark property prepares to welcome guests, we are building a kitchen team to match the ambition of the setting.
The Role
The Sous Chef will be the Head Chef's right hand — a calm, capable presence in the kitchen who leads by example, holds standards without compromise, and brings out the best in the team around them.
This is not a conventional kitchen role. The culinary offering at this property is integral to the guest experience — thoughtful, rooted in quality and provenance, and reflective of the setting itself. The Sous Chef will play a central part in shaping and delivering that offering every day.
You will be responsible for:
- Supporting the Head Chef in the day-to-day running of the kitchen operation
- Leading the brigade on the pass and maintaining consistency of output
- Contributing to menu development and seasonal planning
- Upholding the highest standards of food safety, hygiene, and kitchen management
- Developing and mentoring junior members of the team
What We're Looking For
- Proven experience as a Sous Chef or strong Senior Chef de Partie ready to step up
- A background in a quality kitchen environment — luxury, fine dining, or country house experience is a distinct advantage
- Strong leadership skills and the ability to run a service with confidence and composure
- A genuine passion for food and an eye for detail that never switches off
- Someone who takes pride in their craft and wants to be part of something exceptional from the ground up
What's on Offer
- A rare opportunity to be part of the opening team at one of Ireland's most remarkable new hospitality destinations
- A kitchen led by a clear culinary vision with real scope to contribute and grow
- Competitive remuneration commensurate with experience
- A setting where quality is non-negotiable and great food genuinely matters
