We are seeking a talented and motivated Sous Chef to support our Executive Head Chef in leading the busy kitchen operations. This is a key leadership role within the culinary team, ideal for a chef with strong technical ability, creativity, and proven supervisory experience.
You will help maintain the highest food standards across all outlets, oversee daily operations, and ensure excellence in both service and kitchen organisation.
• Support the Executive Head Chef in managing all kitchen operations
• Lead, train, and mentor junior chefs and kitchen team members
• Deliver high-quality dishes with consistency across all menus
• Assist with menu creation, costing, and seasonal updates
• Ensure strict compliance with HACCP, food safety, and hygiene standards
• Manage stock levels, ordering, waste reduction, and cost control
• Oversee food preparation for restaurants, bar dining, banqueting, and events
• Maintain smooth communication between kitchen and front-of-house teams
• Support kitchen scheduling, task delegation, and performance reviews
Your day may begin with reviewing prep lists, checking daily orders, and coordinating with the kitchen team before service begins. You’ll work closely with the Executive Head Chef to plan menus, manage workflow, and ensure each plate leaving the pass meets the hotel’s high standards. Whether leading a busy lunch service, supporting a large banquet, or coaching a junior chef, every day brings variety, teamwork, and the satisfaction of delivering exceptional dining experiences.
• Previous experience as a Sous Chef in a hotel or high-volume kitchen
• Strong leadership and people management skills
• Excellent culinary skills with a passion for quality and creativity
• Ability to thrive in a fast-paced, service-driven environment
• Knowledge of food safety, HACCP, and best kitchen practices
• Strong organisational and communication skills
• Flexibility to work a mix of shifts, including weekends and evenings
• Experience within a 4-star or branded hotel environment
• Expertise in banqueting and large-scale event catering
• Experience with menu planning and cost control
• Ambition to progress within The iNUA Hotel Collection
